Winter Melon Kelp Soup

  • 2 cupsof Chinese mushrooms
  • 2 cupsof melon
  • 1/2 cupof kelp
  • 1 cupof ribs
  • 8 cupsof water
  • 1/4 cupof ginger
  • 1/10 cupof salt


  1. Soak the mushrooms in water until they are rehydrated. It takes about 4 hours. Cut off and discard the skin from melon. Cut off the seeds and cut the melon into big chunks.

  2. Take a big pot and put there rinsed kelp, ribs and mushrooms. Pour it with 6 cups of water. Bring the soup to boil and then let it simmer for another 20 minutes. Then, add few sliced of ginger and melon. Add another 2 cups of water and boil on high heat for 15 minutes. Season the soup with salt. Enjoy!
