  • 2 cupsof shallots
  • 2 cupsof herbs
  • 1/10 cupof salt
  • 1/10 cupof pepper
  • 1/3 cupof Dijon Mustard
  • 1 cupof olive oil
  • 1/3 cupof vinegar


  1. Take a bowl and put Dijon Mustard, salt, pepper, chopped herbs, and diced shallots in it. Add vinegar and stir to combine all ingredients. Drizzle in the olive oil as you whisk constantly to create the emulsion. As the mixture thickens, you can pour the oil in more quickly than before. Stir until it is ready.

  2. Alternatively, you can add all of the ingredients into a jar. Make sure the lid is on tight and shake vigorously to combine.
