Vegetable Risotto

  • 1/4 cupof chopped leek
  • 1/4 cupof chopped pepper
  • 1/2 cupof cauliflower
  • 1/4 cupof diced onion
  • 1 cupof risotto rice
  • 2 cupsof chicken broth
  • 1/2 cupof creme


  1. Dice the onion and put in into the pan. Fry it for few seconds and add pepper and leek into the pan, as well. Then, add risotto rice right into the pan with vegetables. Next, add cauliflower to the mixture. In order to make a risotto, you need to add chicken broth and rice should absorb it. Add broth little by little during 20 minutes. Finish the cooking with adding some dried or fresh herbs. As an option, you can add creme into risotto. The dish is very yummy. Enjoy it!
