Vegan Pizza with Grated Pumpkin

  • 1 cupof warm water
  • 1/30 cupof active dry yeast
  • 1/7 cupof coconut sugar
  • 3 cupsof gluten free or wholemeal flour
  • 1 cupof tomato sauce
  • 1 cupof sliced tomatoes
  • 1 cupof sliced mushrooms
  • 1/2 cupof spinach leaves
  • 1/2 cupof corn
  • 1/2 cupof sliced onions
  • 1/2 cupof grated pumpkin


  1. Put the water in a bowl, add sugar and yeast and let dissolve. Let stand for about 5 to 10 minutes to activate yeast. Next, add the flour and mix well. Dust your hands with flour, add flour as needed and knead gently for about 10 minutes until the dough is elastic. Keep the dough for 1-2 hours to let it rise. Divide the dough into two pieces to make two pizzas.

  2. Make you dough thin and round and add tomato sauce, tomatoes, mushrooms, spinach, onions, corn and grated pumpkin. Put your pizza into the oven for around 10 minutes.
