- 3/4 cupof lightly salted butter
- 1/2 cupof dark brown sugar
- 1 cupof blackstrap molasses
- 1 cupof golden syrup
- 1/4 cupof freshly grated root ginger
- 1/10 cupof mixed spice
- 1/10 cupof ground ginger
- 1/20 cupof cloves
- 1 1/2 cupof plain flour
- 1/10 cupof baking powder
- 1 1/4 cupof full fat milk
- 1 cupof eggs
- 1 cupof cream cheese
- 1/2 cupof lemon zest
- 1/7 cupof lemon juice
- 1/5 cupof icing sugar
Preheat your oven to 175 degrees.
Take a saucepan and add the molasses, butter, ginger, sugar and dried spices.
Heat it on low and stir until the butter is melted.
Take a large bowl and sieve the baking powder and flour.
Take a new bowl and whisk the eggs with milk.
Once the butter is melted, add the egg and milk mixture to the flour.
Stir well before adding the mixture from the saucepan.
Add the mixture and mix well.
Take a baking sheet, add the parchment paper and pour in the mixture.
Bake for about 30 minutes.
Meanwhile, take a bowl and make the frosting.
Add the cream cheese, lemon zest, lemon juice and icing sugar into a bowl and mix well.
When the cake is ready and cooled, spread the frosting over it. Enjoy!
