Shredded Brussels Sprout Salad

Ingredients

  • 2 cupsof shredded Brussles sprouts
  • 1/5 cupof lemon juice
  • 1/5 cupof olive oil
  • 1/10 cupof salt
  • 1/10 cupof pepper
  • 1/2 cupof avocado
  • 1/5 cupof dried cranberries

Instructions

  1. Take a plate and whisk together lemon juice and olive oil.

  2. Add a little bit of salt and pepper.

  3. Take a bowl and add your shredded Brussels sprouts.

  4. Pour your lemon juice mixture on top.

  5. Add some grated parmesan and some avocado.

  6. Top with dried cranberries.

  7. Toss and enjoy!
