Scallion Pancake Beef Roll

  • 1/20 cupof black cardamom pod
  • 3 cupsof scallion springs
  • 1/5 cupof smashed garlic cloves
  • 1/10of star anise
  • 1/5 cupof ginger
  • 1/5 cupof dried red chilies
  • 1/8 cupof cinnamon sticks
  • 1/4 cupof wine
  • 1/6 cupof dark soya sauce
  • 1/4 cupof soya sauce
  • 1/20 cupof salt
  • 1/20 cupof peppercorn
  • 1/20 cupof rock sugar
  • 6 cupsof beef shank
  • 1 cupof dark brown sugar


  1. Take a bowl and add cardamom pod, scallion springs, garlic cloves, start anise, ginger, dried red chilies and cinnamon sticks. Keep this bowl aside.

  2. In a second bowl, add wine, dark soya sauce, soya sauce, salt, peppercorn and rock sugar. Now take the content of first bowl and fry them. Add soya sauce and spices to it. Add the beef and add water until the beef is submerged. Cover it with lid.

  3. Transfer it to oven and cook for 2.5 hours. After that, take the beef out and slice it. On a pancake, apply some sauce, and the beef slices and roll it.
