  • 1 cupof dough
  • 1 cupof mild white cheddar
  • 1/2 cupof shirtcrust pastry
  • 1 cupof eggs
  • 1/4 cupof mustard
  • 1/2 cupof double cream
  • 1/20 cupof salt
  • 1/20 cupof black pepper
  • 1/2 cupof flour
  • 1/8 cupof olive oil
  • 1/2 cupof bacon or leek


  1. Cut the bacon or the leek (depending on whether you want a vegetarian meal or not) into small pieces. Fry it gently in a pan, adding salt and olive oil. Cut the cheese into small cubes, 1 piece of cheese reserve and rub on a grater.

  2. In a big bowl mix three eggs, add double cream and diced cheese. Season it with salt and pepper. Add the leek or the bacon into the mixture.

  3. Cover the oven pan with parchment. Roll the dough and pave the oven pan with it. Put mustard into the base. Next, put the mixture into the mold. Roll nicely the remaining pastry. Put the rubbed cheese on top. Bake it in the oven for 30 minutes. Enjoy!
