- 1/20 cupof cold (iced) water
Take a bowl and mix there flour, salt and butter. Mix it until small clumps start to form. Add cold water spoon by spoon. Pay attention to the texture. You want it stick together but not be sticky. There is another tip for good dough. Put the flour on the table and roll, so it will not stick. Also, roll the dough always from the center.
It is very difficult to make a perfect round. If you have some cracks in the dough, moisten a finger in cold water and put it on a crack. Push the dough together and there will be no crack anymore.
