Peach Almond Cakes

  • 1/2 cupof butter
  • 1 1/2 cupof eggs
  • 1/2 cupof sugar
  • 1/10 cupof salt
  • 1/20 cupof vanilla extract
  • 1/4 cupof almond meal
  • 1/5 cupof all-purpose flour
  • 1/2 cupof peaches


  1. Take a pan and add your butter.

  2. Put it on medium heat and melt the butter until its nutty golden brown.

  3. Turn off the heat and reserve.

  4. Take a bowl and add the egg whites.

  5. Add 1/2 cup of white sugar.

  6. Whisk the ingredients well.

  7. Next, add a pinch of salt, vanilla extract, all-purpose flour and almond meal and whisk well.

  8. Add your brown butter and whisk again.

  9. Butter your muffin molds and add a pinch of flour to each whole.

  10. Pour in your mixture.

  11. Bake for about 5 minutes at 400 degrees F before adding the fruit.

  12. Slice your peach and cut off the skin. Cut it into pieces.

  13. Put one piece of peach on each muffin and return them into the oven for about 10 to 12 minutes or until browned.

  14. Let the muffins cool for at least 10 minutes before trying to remove them.
