- 4 cupsof steaks
- 1/5 cupof salt
- 1/5 cupof pepper
Dry steaks on both sides with a paper towel and place them on a plate until ready to cook. Let them come to a room temperature for about 30 minutes. Preheat the oven to 400 degrees. Generously season both sides with salt and pepper. Heat the pan on a medium-high flame. Add a table spoon and a half of clarified butter.
Place the steaks in the center of a pan, making sure that there is enough room between them. Let the steaks sear for three minutes on each side. When the crust appears - flip them. If the pan gets too hot, lower the flame.
Transfer the pan to the oven for seven minutes to make the steaks medium-rare. Transfer the steaks to a clean plate. Cover them with foil and leave for 10 minutes.
