Mini Carrot Cup Cakes

Ingredients

  • 1 cupof carrot cake mix
  • 1/2 cupof eggs
  • 1/3 cupof oil
  • 3/4 cupof can crushed pineapple
  • 1/2 cupof raisins
  • 3/4 cupof coconut
  • 1/2 cupof chopped walnuts
  • 3/4 cupof Cream Cheese Frosting
  • 1/2 cupof Orange Frosting
  • 1/2 cupof Green Frosting

Instructions

  1. Preheat an oven to 325 degrees. Take a bowl and mix cake mix, eggs, oil, pineapple, raisins, coconut, and walnuts. Mix it thoroughly.

  2. Put the mixture into cupcakes wrappers until each of them is about 2/3 full. Bake for 15 minutes. When the cupcakes are ready, let them cool completely.

  3. Then, top the cupcakes with cream cheese frosting. In order to make carrots on top, you may use the orange and green frosting.
