Low Fat Vegan Nachos

Ingredients

  • For tortillas:
  • 1 cupof organic corn tortillas
  • 1/7 cupof chili powder
  • 1/7 cupof cumin
  • 1/4 cupof lime
  • 1/10 cupof salt
  • For nacho cheese:
  • 1 cupof red pepper
  • 1/3 cupof nutritional yeast
  • 1/15 cupof salt
  • 1/15 cupof chili powder
  • 1/20 cupof cayenne pepper
  • 1/10 cupof garlic
  • 1/3 cupof hemp seeds
  • 1/5 cupof lemon juice
  • 1/8 cupof water
  • For assembling:
  • 1/4 cupof lime
  • 1/5 cupof cilantro
  • 1/4 cupof peppers
  • 1/5 cupof red onion
  • 1/2 cupof black beans
  • 1/5 cupof hot sauce
  • 1/2 cupof tomatoes

Instructions

  1. First, cut your tortillas into triangles.

  2. Lay them out on your baking tray with parchment paper.

  3. Sprinkle a little bit of lime, chili powder, salt and cumin.

  4. Set your oven at 450 degrees and bake them for about 10 minutes.

  5. For nacho cheese, add red pepper, nutritional yeast, salt, chili pepper, cayenne pepper, garlic, hemp seeds, lemon juice and some water to your blender. Blend until well incorporated.

  6. To assemble, pour everything over the chips. Enjoy!
