Lenny Russo's Chilled Asparagus Soup

  • 2 cupsof asparagus
  • 1/2 cupof spring onions
  • 1 cupof fresh mint leaves
  • 1 cupof vegetable stock
  • 1 cupof cream
  • 1 cupof sour cream


  1. Take fresh mint leaves and put them into blender. Pour there veggie broth and blend the mixture. Season it with salt and white pepper, blend a little bit again.

  2. Then, add to the mixture spring onions and asparagus. Blend everything again. If you want thicker consistency, you can add more asparagus.

  3. Pour the soup into a plate and garnish it. Take a bowl and mix sour cream with salt, black pepper, cumin and mix it up. Garnish the soup with spiced sour cream with onions and hazelnuts. Enjoy!
