- 1/7 cupof sugar
- 1/7 cupof fresh lemon zest
- 2 cupsof all-purpose flour
- 1/7 cupof baking powder
- 1/10 cupof baking soda
- 1/10 cupof salt
- 2 cupsof buttermilk
- 1 cupof eggs
- 1/8 cupof pure vanilla extract
- 1/5 cupof fresh lemon juice
- 1/3 cupof unsalted butter, melted
- 1/7 cupof poppy seeds
- 1/7 cupof vegetable oil
Take a bowl and add 2 tablespoons of lemon zest and sugar. Set aside.
Next, take a large bowl and add 1 tablespoon of baking soda, 1 tablespoon of salt, 3 cups of flour and 2 teaspoons of baking powder. Whisk and set aside.
Melt 4 tablespoons of unsalted butter.
Take a separate bowl and whisk together buttermilk, vanilla extract, melted butter, eggs and lemon juice.
Pour the wet ingredients all at once into the dry ingredients.
Next, add the poppy seeds. Stir well to combine.
Place your pan over medium heat. Add a little bit of vegetable oil.
Add the batter to your hot pan. Use about 1/4 cup of batter for large pancakes.
Cook until golden brown.
After that place your pancakes on an oven-proof plate and put in an oven at 150 degrees F until they are cooked. Enjoy!
