Jollof Rice

Ingredients

  • 1/2 cupof oil
  • 5 cupsof beef cut into small pieces
  • 5 cupsof stock or water
  • 1 cupof chopped onions
  • 1/7 cupof garlic chili paste
  • 5 cupsof non-sticky rice
  • 1 cupof tomato paste
  • 3 cupsof chopped or blended tomatoes
  • 1 cupof cut bell pepper
  • 2 cupsof cut and peeled carrots
  • 1/7 cupof salt
  • 1/7 cupof spices
  • 1 cupof green beans

Instructions

  1. Take a large pot and heat your oil. Next, add your beef and fry it until brown. Then, remove it to another pan. Add your onions and saute for about 2 minutes. Afer that add garlic and chili paste and saute for about 2 minutes. Next, add the tomato paste and fresh blended tomatoes. Cook the ingredients for about 5 to 7 minutes. Next, add your stock (or water), rice, beef, spices and salt. Cook all the ingredients for about 10 minutes on low heat. Then, add the vegetables and cook for another 10 minutes. Cook until the rice is ready. Enjoy!
