Jamaican Black Rum Cake

Ingredients

  • 2 cupsof butter
  • 2 cupsof sugar
  • 2 cupsof flour
  • 2 cupsof breadcrumbs
  • 1/7 cupof baking powder
  • 3 cupsof eggs
  • 1/2 cupof raisins
  • 1/2 cupof prunes
  • 1/2 cupof currant
  • 1 cupof mixed peel
  • 1/2 cupof orange juice
  • 1/5 cupof browning
  • 1/7 cupof wine
  • 1/7 cupof rum
  • 1/7 cupof mixed spice
  • 1/7 cupof vanilla
  • 1/9 cupof rose water
  • 1/9 cupof cinnamon powder

Instructions

  1. First of all, place the fruits in a large jar at least a day in advance.

  2. Pour wine and rum over the fruits and leave to soak.

  3. Now, take a mixing bowl and cream sugar and butter.

  4. Add the browning, soaked fruits and stir well.

  5. Beat eggs for 10 to 15 minutes until light and frothy.

  6. Add the vanilla, rose water, cinnamon powder and mixed spice.

  7. Add the egg mixture to the butter one. Add the orange juice as well.

  8. Fold soak fruits into this mixture.

  9. Gradually fold in flour mixture.

  10. Take your baking sheet and grease it.

  11. Pour the mixture into tins and bake for about two hours at 350 degrees until ready.
