How to Spatchcock Your Thanksgiving Turkey

  • 10 cupsof turkey
  • 3 cupsof diced vegetables
  • 1/5 cupof salt
  • 1/5 cupof pepper
  • 1/10 cupof bay leaves
  • 1 cupof chicken broth
  • 1/4 cupof flour
  • 1/7 cupof butter


  1. Make the turkey dry with your paper towels. Place it breast side down on a cutting board. Cut out the turkey's back. Cut the odd fat off. Cut around a wishbone. Pop it out. Flip the bird over and spread its legs out. Then, press down on a breast bone. You should feel it crack a little bit. Put a foil on your baking sheet and add some diced vegetables. Set a wire rack on top of the vegetables and put your turkey on top of it. Season it with salt and pepper. Put it in an oven at a 450 degrees.

  2. While the turkey roasts, chop off the backbone. Saute with some olive oil and some vegetables. Cover it all with chicken broth. Add some bay leaves and let it simmer for 45 minutes. Strain.

  3. Cook a quarter cup of flour with butter until it is golden. Whisk in you stock. Take of your turkey when it is ready. Butcher it into parts. Cover with your sauce.
