  • 1/15 cupof salt
  • 1/15 cupof pepper
  • 1/5 cupof egg yolks
  • 1 cupof olive oil
  • 1/7 cupof garlic paste
  • 1/10 cupof vinegar


  1. Add the salt, pepper and vinegar to a mixing bowl with the egg yolk. Stir to combine and begin whisking. Continue whisking while adding olive oil a little bit at a time to begin the emulsion. As the mixture thickens, you can pour the oil in more quickly than before. Keep drizzling and whisking until the aioli is a thick mayonnaise-like consistency. Stir in the garlic paste at the very end.
