Ingredients

  • 1 cupof sugar
  • 3/4 cupof oil
  • 1 1/2 cupof eggs
  • 1/10 cupof vanilla
  • 3/4 cupof cream or plain yogurt
  • 1 1/2 cupsof oatmeal
  • 1/2 cupof almond flour
  • 1/2 cupof amaranth flour
  • 1/4 cupof ground pistachios
  • 1/2 cupof blueberry
  • 1/10 cupof baking powder
  • 1/20 cupof xanthan gum
  • 1/20 cupof salt

Instructions

  1. Take a bowl and add the sugar and oil. Mix the ingredients very well.

  2. Add the eggs and mix them well.

  3. Add the salt and cream (or plain) yogurt, and vanilla. Mix well.

  4. Take a new bowl and add the oat flour, almond flour, pistachios, xanthan gum, baking powder, and amaranth flour.

  5. Mix well and add it to the previous mixture.

  6. Combine the ingredients very well.

  7. Add the blueberries and mix.

  8. Put the batter in the molds and bake them at 350 degrees F for about 25-30 minutes or until golden brown.
