- 2 cupsof figs
- 1/2 cupof fresh lemon juice
- 1/2 cupof white sugar
- 1/2 cupof milk
- 1/2 cupof creme
- 1/4 cupof egg yolk
- 1 cupof balsamic vinegar
Cut the figs into halves and pour it with fresh lemon juice. Sprinkle it with sugar. Put in in a pan and simmer the mixture on a middle heat to a needed consistency. When it is cooked, put the mixture into the blender and make the puree.
Take another pan and mix milk, creme, egg yolks, and sugar. Whisk the mixture. Temper it, stream, add the puree, and blend everything. Pour the mixture into ice-cream maker and add some more puree right there.
In order to make balsamic syrup, put balsamic vinegar into the pan on heat and keep it until it is thickened. Next, cool it, drizzle the ice cream, and mix it.
The ice cream is ready. Enjoy it! When serving, garnish the ice-cream with fig half and mint leaves.
