- 2 cupsof peeled carrots
- 1/7 cupof Dijon mustard
- 1/7 cupof lemon juice
- 1/7 cupof vegetable oil
- 1/7 cupof extra virgin olive oil
- 1/7 cupof honey
- 1/12 cupof salt
- 1/12 cupof black pepper
- 1/5 cupof chopped fresh parsley
- 1/7 cupof scallions
Grate your carrots and set aside.
Take a bowl and combine the lemon juice, vegetable oil, Dijon mustard, honey, pepper, salt and olive oil.
Add the carrots, scallions and fresh parsley.
Toss the ingredients.
Cover your salad and refrigerate. Enjoy!
