Cold Soba with Mentsuyu Sauce

  • 1/2 cup soy sauce
  • 1/2 cup Mirin
  • 1/4 cup sake
  • 1 cupof buckwheat flour
  • 1/3 cupof plain flour
  • 1 cupof water
  • 1 cupof Dried Bonito Flakes
  • 1/2 cupof scallion
  • 1/2 cupof daikon radish
  • 1/7 cupof wasabi
  • 1/5 cupof chopped scallions
  • 1/5 cupof tapioca starch
  • 1/4 cupof Mentsuyu sauce


  1. Take a pan and add 1/2 cup of soy sauce, 1/2 cup fo Mirin, 1/4 cup of sake and 1 cup of Dried Bonito Flakes and bring them to a boil. Strain Bonito Flakes, cover and refrigerate.

  2. Grate some radish and chop some a scallion to add to dipping sauce.

  3. take a large bowl and combine buckwheat and all-purpose flour. Add 1/2 cup of water and mix the ingredients. Knead the dough until it comes together into a rough and slightly crumbly dough. If it is too dry, add water a tablespoon at a time. Knead until it holds together and is smooth. The dough will be dense. Shape the dough into a cone. Flour the surface with tapioca starch and flatten. Roll the dough to make it as thin as possible. Turn the dough as needed. Starch and fold dough in half like a book. Starch and fold top down. Repeat and fold top down. End with a neat rectangle of fold dough.

  4. Slice the dough into strands. Toss the starch to prevent sticking. Cook your dough slices in salted water for 60 seconds. Next, soak them in ice water and drain.

  5. To prepare the soba dipping sauce, add 1/4 cup of Mentsuyu sauce, 1/4 cup of water, daikon radish, scallions, and wasabi. Top the soba with shredded nori.
