Chickpea Pasta Soup

  • 1/2 cupof diced onion
  • 1/10 cupof fresh rosemary
  • 1/8 cupof garlic
  • 2 cupsof canned tomatoes
  • 1 cupof cooked chickpea
  • 1/2 cupof vegetable broth
  • 1/2 cupof no chicken broth
  • 1/2 cupof pasta
  • 1/4 cupof parsley


  1. Dice the onion and put it into the pan. Be sure that you added enough water to cover the bottom of pan. Add rosemary to the onion, as well. Cook onion for some 8 to 10 minutes until it becomes soft.

  2. Meanwhile, mash the chickpeas with broth, it will have nice texture. When the onion is ready, add there garlic and cook it for 40 seconds. Add there two cups of tomatoes and let them heat for 3 to 5 minutes. You may pick up the stems of the rosemary. Next, add chickpeas, pour broth and make it boil. Add parsley to the mixture as a garnish. Season the soup with pepper. Once the water started to boil, sprinkle in the pasta and let it cook. Let it boil for about 8 minutes. The soup is ready. Enjoy your meal!
