Chickpea and Avocado Sandwich

  • 1 cupof chickpeas
  • 1 cupof avocado
  • 1/4 cupof cilantro
  • 1/5 cupof chopped green onion
  • 1/2 cupof lime
  • 1/10 cupof salt
  • 1/10 cupof pepper
  • 2 cupsof bread for toast


  1. Drain the chickpeas and rinse them with some water. Dab dry with a paper towel.

  2. Take a medium bowl and add chopped green onion, chopped cilantro, cut and peeled avocado, chickpeas, salt, and pepper. Squeeze the juice from one lime. Smash up all the ingredients with a fork or potato masher. Flavor with salt and pepper.

  3. Take your bread and spread the mixture on it. Enjoy your healthy food!
