- 1/4 cupof parsley
- 1/4 cupof cilantro
- 1 cupof mushrooms
- 1/2 cupof onions
- 1/7 cupof garlic
- 1/5 cupof serrano peppers
- 1/2 cupof tomatoes
- 1/4 cupof olive oil
- 1/30 cupof chili powder
- 1/30 cupof black pepper
- 1/15 cupof salt
- 1 cupof rotisserie chicken
- 1/2 cupof sour cream
- 1 1/4 cupof cheddar cheese
- 1 cupof tortillas
- 1/5 cupof tomato sauce
Chop the parsley and the cilantro.
Dice 3-5 large mushrooms, 1 large onion, 2 cloves of garlic, 2 serrano peppers, and 1/2 cup of tomatoes.
Prepare 1/4 cup of olive oil.
Take a frying pan and put the onions, serrano peppers, garlic, parsley, cilantro, 1/4 teaspoon of chili powder, 1/4 teaspoon of black pepper and 1/15 cup of salt.
Cook for about 4 to 6 minutes on the low heat with olive oil.
Add the tomatoes, the mushrooms, 1/2 cup of sour cream, and 1 cup of cheddar cheese and stir well.
Cook for about 5 minutes.
Take your tortillas and add the mixture. Roll them up and pour a little bit of tomato sauce on top.
Sprinkle with the cheddar cheese.
Bake for about 15 to 20 minutes.
Put a little bit of parsley on top and enjoy!
