Ingredients

  • 2 cupsof spinach
  • 1/2 cupof garbanzo beans
  • 1/2 cupof tomatoes
  • 1/2 cupof cilantro
  • 1/2 cupof carrots
  • 1/2 cupof mung beans
  • 1/2 cupof green bell peppers
  • 1/3 cupof celery
  • 1/3 cupof onions
  • 1/2 cupof cucumbers
  • 1/3 cupof almonds
  • 1/3 cupof raisins and cranberries
  • 1/2 cupof egg plants
  • 1/5 cupof salt
  • 1/5 cupof pepper
  • 1/10 cupof onion powder
  • 1/10 cupof garlic powder
  • 1 cupof olive oil
  • 1/5 cupof agave nectar
  • 1/5 cupof lemon juice
  • 1/7 cupof basil herbs
  • 1/7 cupof Italian herbs
  • 1/10 cupof garlic powder
  • 1/10 cupof onion powder
  • 1/7 cupof vinegar

Instructions

  1. Take your eggplant, slice it and add some salt, pepper, garlic powder and onion powder. Drizzle a little bit of olive oil.

  2. Take a plate and add your chopped spinach. Cover it with chopped cilantro, eggplant, garbanzo beans, mung beans, cut onions, cut carrots, cut bell pepper and chopped celery. Next, add your cut tomatoes, almonds, cranberries and raisins.

  3. To make the dressing, take a big mixing bowl and add your olive oil, agave nectar, lemon juice and vinegar and blend the ingredients together. Next, add your salt, pepper, onion powder, garlic powder and your herbs. Keep blending. Take a bottle and pour the liquid inside. Shake it before add to your salad.
