Charred Achiote Chicken

  • 5 cupsof chicken
  • 3/4 cupof achiote paste
  • 2 cupsof peeled tomato
  • 1/4 cupof cider vinegar
  • 1/4 cupof extra virgin olive oil
  • 1/10 cupof ground white pepper
  • 1/5 cupof garlic
  • 1/10 cupof salt
  • 3/4 cupof lime juice
  • 1/10 cupof chipotle puree
  • 1/20 cupof dried oregano
  • 1/10 cupof cumin powder
  • 1/2 cupof orange juice and zest
  • 1/2 cupof sliced limes
  • 2 cupsof pitted black olives
  • 1/4 cupof ginger
  • 1/2 cupof water
  • 1/2 cupof sugar
  • 3/4 cupof jalapeno chilies


  1. Split the chicken down to the middle and open the bird by pressing done on the breast plate.

  2. In suitable bowl, transfer the chicken and add the achiote marinade. In order to make the marinade place achiote paste, peeled tomato, cider vinegar, extra virgin olive oil, white pepper, garlic, salt, lime juice, chipotle puree, oregano, cumin powder and oranges juice and zest in a blender and process it. Leave the chicken in marinade for 2 hours.

  3. Crank up the BBQ, oil the chicken and place onto char grill section. Cook the chicken by turning to other sides. Continue until cooked. Try not to overcook it because the chicken will be too dry.

  4. While serving it, cut the chicken into chunks. Dress it with olive oil and lemon juice. Spoon some of the candied black olive. Enjoy the food!
