Carrot Tops Dish

  • 3 cupsof carrot tops
  • 2 cupsof mustard greens
  • 2 cupsof turnip greens
  • 2 cupsof dinosaur kale
  • 2 cupsof parsley
  • 3/4 cupof tahini
  • 1/7 cupof umeboshi vinegar


  1. Chop your carrot tops finely. Fill a large saucepan with water. Chop your dinosaur kale, turnip greens, mustard greens and parsley. First, put your carrot tops into your pan and put on fire. Let it simmer for 8 minutes. Next, add dinosaur kale. Later add turnip greens, let it simmer and add parsley. Let the greens simmer for 5 minutes all together. Then, stir the greens.

  2. To make the sauce, take 3/4 cup of tahini and about a tablespoon of umeboshi vinegar and mix the ingredients until it thicken up.

  3. Add the mixture to the greens. If there is not enough liquid in a pan, add some water and mix all together.
