Bread Pudding

  • 2 cupsof eggs
  • 2 cupsof day old bread
  • 1 cupof coconut milk
  • 1 cupof whole milk
  • 2 cupsof palm sugar disks
  • 1 cupof sugarof honey
  • 1/4 cupof butter
  • 1/12 cupof vanilla extract
  • 1/7 cupof cardamon pods
  • 1/2 cupof overnight rum soaked dried berries


  1. First, preheat your oven to 350 degrees.

  2. Next, cut your bread into cubes.

  3. Take a mixing bowl and beat the eggs. Add 1 cup of whole milk and 1 cup of coconut milk. Mix the ingredients well.

  4. Take a pan, put it on heat and melt your palm sugar disks. You will need to add some water to your pan.

  5. Melt the butter.

  6. Add your butter and sugar to the wet mix.

  7. Cut your cardamon pods and get the seeds. Ground them with a mortar/pestle to smaller bits. Add them to the wet mix.

  8. Next, add 2 tablespoons of vanilla extract and 1/2 cup of overnight rum soaked dried berries.

  9. Combine your wet mixture with bread cubes. Let it sit and soak for about 15 minutes.

  10. Add the mixture to a greased baking pan and put in oven at 350 degrees for 45 minutes. If top part springs back when touched, it is done. Serve hot or cold.
